Red Velvet Rice Krispies Truffles

Yes, you read that correctly. These are red velvet Rice Krispies treats that you roll around in white chocolate. They’re dangerously good.

5 tablespoons unsalted butter

3 cups mini marshmallows

1/3 cup red velvet cake mix

3 cups Rice Krispies

8 ounces white chocolate, roughly chopped

Line a large baking sheet with parchment paper and set aside.

In a large nonstick stock pot, melt butter over medium-high heat. Add marshmallows and stir until completely melted. Stir in cake mix. Remove from heat and fold in Rice Krispies until coated.

Let mixture cool for 3 minutes and form into 1-inch balls and place on prepared baking sheet. Let cool completely.

In a medium microwave-safe bowl, microwave chocolate for 1 minute and stir. If not completely melted, microwave in 15 second intervals, stirring after each until smooth.

Dip balls into melted chocolate using toothpicks or a fork and return to baking sheet. Let the chocolate coating harden on the counter for 1 hour or in the refrigerator for 20 minutes. Store in an airtight container for up to 3 days.

Makes 28 truffles
